Another "meal in one pan" (if you don't count the skillet, which I don't).
Still working on this one...
Ingredients:
- 3/4 cup couscous
- 1/2 to 3/4 cup cooked vegetables (I used corn)
- 8 oz sirloin steak, cut into 1cm cubes
- 2 tbsp butter
- 2 tbsp olive oil
- 3 tbsp tomato catsup
- 1/4 cup onions, chopped finely
- 1 clove garlic, smashed and peeled
- salt & black pepper to season
Directions:
- Start 2 cups water boiling in 2 qt sauce-pan.
- Pan-fry steak in a bit of olive oil, seasoning with salt and pepper.
- When water reaches a boil, add couscous and stir.
- Return water to a boil, cover, and turn off heat.
- When steak is partially done, add onions and garlic to the steak.
- Add vegetables and steak (with juices) to couscous.
- Mix together, adding butter, olive oil and catsup.
- Season to taste with salt and pepper.
This still needs something else, but I'm not sure what it is. It's much closer with the addition of the catsup than without, though.
Serves: 2-3 servings
